Spaghetti again?!?!

I am the cook in our house. I cook every meal that isn’t fast food or in a restaurant. We have a few family staples that I cook on a regular basis: spaghetti, friend chicken, pot roast, tacos, pizza, beef with broccoli, chicken noodle soup, and sometimes meatloaf.  To be honest….I AM SICK OF THESE MEALS!! I need to find some good (read that as EASY) recipes that my family will love. Please share your favorite recipe or just a meal you like to cook , I need some ideas!

Here is the recipe for the buttermilk chicken I made for dinner last night….Oh it was good and as unhealthy as it comes!

 3/4 c. flour
Scant 1/2 c. cornmeal
1 1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. red cayenne pepper (ground)
1 c. buttermilk or 1 tbsp. vinegar and milk to make 1 c.
10-12 pieces of chicken (1/4 breasts, drumsticks and thighs)
1-2 tsp. Mrs. Dash

Wash chicken and trim any fat and
extra skin. In a shallow pieplate combine dry ingredients. Dip chicken in
buttermilk, let excess drain. Dip chicken in dry mix to coat. Let dry on a rack
or wax paper 15 minutes.

Meanwhile heat 2 inches of oil to 365 degrees in a deep 12 inch skillet over
medium high heat. Add enough chicken to skillet to fit one layer. Reduce heat to
medium. Fry chicken covered about 6 minutes for white meat, 8 for dark. Uncover,
turn chicken with tongs, fry uncovered 6-8 minutes longer until brown.

    I understand where you are coming from there. One thing you can do is spice up those meals you are sick off. For example one thing we make is homemade bbq chicken pizza, it’s really good.

    You can do a lot with spaghetti noodles, add chicken and soy sauce or teriyaki sauce to it.

    Take your tortilla shells and make chicken finger wraps or for a healthier version just grilled chicken with cheese and honey mustard or ranch or bbq.

    What about pigs in a blanket? Those are always good.
